Peach Bellini: I Want More

Now my friends and I went on the town somewhat on Saturday, all because I was about once again click for strike solitaire on my computer, and I was encouraged to try a drink called Bellini. Wow what a drink, I just had to know how to make one for myself.Here I share my version.

A Bellini is a refreshing, sweet cocktail made from peaches and champagne. Invented in Italy, and named after an Italian artist whose paintings the cocktail’s lovely color evoked, this cocktail is favored by women for its light, elegant taste. Here’s an easy recipe for the Classic Peach Bellini.

Ingredients for a Classic Beach Bellini:

Two ounces peach puree or peach juice, chilled

Four ounces champagne or white sparkling wine, chilled

Fresh strawberry or peach slice to garnish

To make this cocktail, simply add the peach puree or juice to a champagne flute, slowly pour in the champagne, and garnish with a fresh strawberry or peach slice. Do not stir and serve immediately.

For stronger cocktails, the champagne to peach ratio may be increased to three to one (three ounces champagne to one ounce peach).

A frozen version is especially refreshing during the warmer months, and can be made by blending three ounces of champagne and three ounces of peach juice or puree with a half cup of ice.

This cocktail is considered low-alcohol, and is popular at occasions where ladies gather, including wedding and baby showers. For baby showers, make a non-alcoholic version of the drink so the mother-to-be can enjoy a Bellini, too: just replace the champagne with sparkling cider.
